There are many different ways to enjoy espresso. In Italy, it’s common to add plenty of sugar to a demitasse cup of espresso, then drink it in two or three sips. The sugar gives it a mild smoothness, for a flavor almost like liquid chocolate. The distinctive layer of tiny bubbles on top, or crema, has so much body that sugar won’t immediately sink into espresso. This crema helps “seal in” the flavor of espresso, like a lid.
